Yam Fry or Sooran Fry

Karunai Kizhangu Varuval

Yam Fry (sooran fry/Karunaikizhangu Varuval)Ingredients:

1. yam – ½ kg
2. Tamarind paste – 2 tsp
3. Chilli powder – ¾ tsp or to taste
4. Turmeric powder – ¼ tsp
5. Curry leaves – 5
6. Garlic – 1 or 2 flakes
7. Salt – to taste
8. Oil – 5 tsp

Sooran fry or karunaikilangu Varuval Preparation:

Peel the outer layer of the skin.

Cut into small cubes.

Now boil these cubes with little amount of water.

When the pieces are cooked, remove from heat and drain the water and keep aside.

Now take a pan and heat with oil.

Add urad dal, crushed garlic flakes and curry leaves.

Sauté till the urad dal turn into golden yellow colour.

Now add the cooked yam pieces, salt, chilli powder, turmeric powder and tamarind pulp.

Combine well and reduce the flame.

Cook till the sooran pieces become dry.

In-between stir well so that they don’t burn.

Now sooran fry (karunai kizhangu varuval) is ready to eat.

Serve with Sambar rice, Rasam rice or Curd rice .
