Ridge gourd tomato curry

beerakaya koora, ridge gourd curry

Ridge gourd tomato curry ingredients:

1. Ridge gourd (big) - 1
2. Tomato - 1 chopped
3. Onion - 1 chopped
4. Red chilli powder - 1/2 tsp or to taste
5. Coriannder powder - 1/2 tsp
6. Turmeric powder - 1/4 tsp
7. Fresh ginger root - 1/2 inch piece
8. Garlic flakes - 2
9. Few curry leaves
10. Few coriander leaves
11. Mustard seeds - 1/2 tsp
12. Oil- 1/2 tbsp
13. Salt - to taste

Beerakaya tomato preparation:

Peel and cut the ridge gourd into samll pieces.

Make a paste with ginger, garlic and keep aside.

Take a pan and heat with oil.

Add mustard seeds, when they start to crackle add chopped onions.

Saute till the onions turn into transparent.

Add chopped tomatoes and saute till the tomatoes become juicy.

Then add ginger garlic paste and saute till the raw smell disappears.

Then add chilli powder, coriander powder, turmeric powder and saute for a min.

Now add ridge gourd pieces and required quantity of salt and little amount of water.

Close with a lid and cook on low flame till the beerakaya pieces become tender.

Finally garnish with coriander leaves and serve hot with rice, chapathi, paratha, etc...
