DUM ALOO
(NORTH INDIAN FOOD RECIPE)
Dum aloo ingredients:1. Potatoes small size - 1 kg 2. Water - 4 cups 3. Oil - for deep frying 4. Onion - 1 (finely chopped) 5. Tomato - 1 (finely chopped) 6. Curd - 2 cups 7. Garam masala - 1 tsp 8. Salt - to taste
SPICES:1. Cloves - 4 2. Bay leaf - 2 3. Pepper corn - 8 4. Cardamom - 4 5. Cinnamon - 1 inch stick
Paste ingredients:1. Large onion - 1 2. Garlic - 10 flakes 3. Ginger - 2 inch piece 4. Coriander seeds - 1 tsp 5. Red chillies - 2 6. Turmeric powder - 1 tsp
Kashmiri Aloo Preparation:Peel and drill holes in them using a fork; this is for the frying to reach the innards of the potatoes.
Heat oil and deep fry the potatoes till golden brown colour.
Grind all the paste ingredients .
Now take a pan and heat with 3 tsp of oil. Then add onions. Fry for few mins.
Add all spices and fry till golden brown colour.
Now add the paste with onions and stir well.
Cook till the raw smell disappears.
Now add curd and salt.
Add fried aloo and water. Combine well and cook for 5 mins in low flame.
Finally add garam masala.
Garnish with coriander leaves and serve hot with roti, paratha and naan.
