COCONUT RICE
(SOUTH INDIAN RICE RECIPE)
Coconut rice ingredients:1. Rice – 1 cup (cooked) 2. Coconut – ½ cup (shredded) 3. Onion – 1 lengthwise chopped 4. Green chillies – 2 chopped 5. Ginger - ½ inch piece 6. Cardamom - 2 7. Mustard seeds – ½ tsp 8. Urad dal – ½ tsp 9. Channa dal – ½ tsp 10. Cashew nuts – 5 11. Curry leaves – 5 12. Coriander leaves - few 13. Oil – 4 tsp 14. Salt – to taste
Coconut rice preparation:
Heat a pan with oil. Add cardamom. Then add mustard seeds, urad dal, channa dal and cashew nuts.
When they colour change to golden brown add curry leaves, onion, coconut and green chillies.
Sauté until the raw smell disappears.
Then add the cooked rice and salt. Mix gently.
Serve with papad or chips.
